Well, it's just me but I do love thanksgiving. I'm limited in how much I can do and can't stand at the stove for more than a couple of minutes at a time. I've pared mine down to manageable levels.

I shall have homemade whole cranberry sauce using honey as a sweetener (IOW, boil, add honey and that's it).

I'm making a sage dressing. I LOVE making dressing and can do it at the table. Just chop up celery & onions and fresh sage, add an egg and a touch of salt and lots of pepper and some broth to my whole wheat home dried bread and stick it in the oven. Num num.

I bought a roasted chicken. Got a turkey breast I will cook tomorrow probably so I'll have a week's worth of sandwiches, turkey tetrazzini and turkey soup.

Got some sweet potatoes which mashed sweet potatoes.

Will make probably tomorrow a waldorf salad out of apples and grapes and nuts.

Tonight I'll have some noodles which will serve as gravy and a small amount of creamed corn.

I love Thanksgiving. For me, I just pare it down to where I can do most of it at my table and minimize the dishes. I'll eat good for the next week plus I'll have had fun preparing it. I LOVE cooking! I used to fix T-giving for the whole family and needed very little help with anything. Some years, had NO help. I even made homemade rolls, homemade pecan pie and pumpkin pie.

I miss cooking. But I'm not much into eating heavy meals any more so I keep my portions small. I DON'T miss feeling like a stuffed turkey myself.
