It seems that we are reading the Bible at different places, you seem to be reading about the creation of man, where I am reading about the creation of the universe, or rather the creation of the “basic stuff” that makes up everything in the universe.
I agree that there must be more to God than space, mass and energy. No man is able to cause space, mass or energy to appear out of nothing, so if God can do it, then there is far more to God than we can imagine.

It's clear that God must have some cognitive abilities, some neurological organization. First, He created man in His own image. Second, He has put things together to appeal to Man's emotions.

Clearly to have the qualities Man attributes to God there is more to God than space, mass and energy.

And since those qualities exist only in the minds of Men, when those minds disappear so do the qualities. As has happened to countless Gods ever since Men and his societies have lived and died.

I agree with you in the sense that, any God that does not contain the concepts of a creator and trinity, would disappear with the believer.
But suppose that the words God or YHWH aka Yahweh, Allah, etc. represents the “creator” of the “trinity” of space, mass, and energy. (Matter can not exist without the three ingredients of space, mass, and energy, that is why I refer to it as a trinity.)
If that is the case, then it would not matter even if the whole Earth and everything on it would be destroyed or totally disappear, the “trinity” of “space, mass and energy” would still remain in the rest of the universe. And the (whatever name) creator that caused the said “trinity” to come into existence would still be there.
My opinion.
