My problem has never really been about weight, but keeping my sweet tooth at bay. No problem with blood pressure either.

I have tried eliminating carbs, but I'm a bread lover in all shapes and sizes. I need it here in the mountains for FUEL, and to break up those short winter days and nights.
Breakfast without carbs is unthinkable!

Maybe it's easier for you to digest the higher protein in meats and nuts with fewer vegetables because of the desert heat.

I would get bored just eating chicken, fish and nuts. I like full spectrum eating, including jazzing up a dinner with gravy, biscuits or a dressing now and then.

Secondly, I live far away from markets and only go into town when I need to; so fresh veggies run out in a matter of days, while breads can be frozen or baked. Unless it's growing out back, or the local farmers are sharing, my veggies run out in days.

I'm glad you finally started looking after yourself. It takes a lot of determination and food is so hard to manage as our taste buds are so important in enjoying this life.

It gets real easy when one cuts out the breads. The breads are loaded with the carbs. If I go through a fast food place I will order a grilled chicken sandwich or something like that - minus the buns and sauce. I don't each french fries, or catsup which are loaded with sugars.

It can get boring, but it all tastes much better. Once one is on a low carb diet your body really wakes up. There is a transition period of a few days where one seems weaker as one's body builds up cells again to extract needed blood sugar from the fat cells.

I break at times and splurge carbs on something like a chocolate bar every now and then, but I find that I have little desire for that stuff anymore. I actually enjoy the taste a plain piece of grilled chicken with a slice of nuked cheese on it as much as a burger with the works.

I don't eat hamburger either. I haven't had a hamburger in over four years. Now its all chicken, turkey. fish, nuts, etc.

Basically, I can eat almost any meat I want, most vegetables in limited quantities, but I avoid breads and sweets.

When I first went on a low carb diet I lost twenty pounds in a month. ;) I was taking in about 1300 calories and ended up between 10-25 carbs most days. My doctor said, "Whatever you're doing....keep doing it." Because my blood pressure was down as well. I attribute that to the large reduction of salt which I used to get from fries, burgers and all that good stuff.

And, yes, I always take stuff out of the plastics and put it in something that won't melt or seep into the foods.

I might have ONE soda a week.
I still like icecream, but make sure it's all natural.
I still use organic milk for my cereal, but definitely less and less of it. I've tried soy milk, and rice milk and coconut milk, but I just don't care for it.
If you're nuking food (and I still do) I hope you are taking it out of the plastic and putting it in a regular heat proof bowl to cook it.

...for a long rime, but once I got to the desert I experienced product that had been exposed to the heat. 5 months of the year you can boil an egg on the sidewalk here. And the Nutrasweet does a little molecular change when it gets over 107 or so and attaches itself to brain cells as it passes through the bloodstream. I had the mother of all head aches and I knew the funny tasting soda caused it. One overheated bad soda was enough to make me quit.

I also avoid dairy including straight milk, half-and-half or creamers. No shakes and no ice cream. I nuke cheese and any dairy products. One bad bacterial encounter from a shake served as a lesson and a wake up call.

I nuke any frozen processed foods in the microwave. For safety's sake I also limit my greens to salads I make and clean myself or greens that are cooked.

Trader Joe's is great and Sprouts has some good stuff too. It's a pain to have to focus on what one eats, but it's less painful than the alternative! ;)

Tejava iced tea, and carbonated mineral water.

A regular soda is basically just a sugar bomb. I would prefer to use up my pancreas on a nice piece of chocolate.

Nutrasweet doesn't bother me, and I sometimes chew gum that has it, but it gives my wife headaches. The field of artificial sweeteners has broadened to the point that I would need to do research on it if I wanted to use them.

The last label I looked at had a "natural" sweetening chemical I'd never even heard of before. There seem to be dozens of these.

I have about 20-35 carbs a day. I don't drink any sodas anymore or even seltzer water - just water and coffee or tea I brew myself.

The sugars kept in the bloodstream from a high carb diet eventually damage the small blood vessels and cause circulatory problems or diabetes. They don't do the brain any favors either.

Eating organic is good. The processed crap is now far more poisonous than it was even ten years ago.

The real problem is that the food industry is now marketing to lower social demographics that are taking over. They churn out a lower grade product for these people. America is becoming China in that regard. Here, I get to to see not only the "A" products which are distributed in the wealthiest neighborhoods, but also the "B" and "C" grade products they market for Hispanics. Many companies are evil and assume these customers will be happy with anything because it's better than what they have in Mexico - and since half of them are here illegally they will never sue for damages or complain.

Eventually, these products will reach every neighborhood and not just be distributed in regions thick with illegals. The bottled soft drinks now have high amounts of benzene in them - even my old standby Perrier has succumbed - and you can taste it. It's oily and leaves a bad taste. This wasn't the case ten years ago. They started getting cheap and sloppy around 2005.
