Grilled Swiss Cheese and Ham with Caramelized Onions

For 1 sandwich

2 slices of whole grain bread (I use Oroweat Health Nut)
6-8 slices of thinly sliced deli honey ham
2 slices of Swiss cheese (with or without holes)
3-4 slices of red onion
Canola spray
3 tsp. butter

Heat an 8 or 9 inch skillet (non-stick) on med high heat. Spray lightly with Canola Oil Spray. Add onions to pan and fry, turning frequently until caramelized (they smell wonderful).

Layer ham slices on 1 piece of the bread. Place the Swiss cheese over the ham and the onions over the cheese. Complete the sandwich by placing the 2nd piece of bread on top of the onions.

Melt half of the butter in the skillet. Lay sandwich on the melted butter and fry until the bottom piece of bread is well browned, 4 minutes. Remove sandwich, add the other half of the butter to the skillet and flip the sandwich over into it to brown the 2nd side, 3 minutes. Cut in half and serve.

It’s simple, it’s quick, it’s delicious.

You may have already had this type of sandwich but I just did one for the first time the other night. Had never had caramelized onions on one and this is delicious.
