Chili, day one November 6, 2020 8:42 pm podrock

Took a bag of dried chili peppers, perhaps two dozen worth, broke them up, removed the stems and seeds (Ha!), and put them into the Thermos pot with hot spring water, brought to a boil. Added smoked salt and pepper. Two cloves of slightly dried out garlic. Other spices I will not reveal. Splash of red wine vinegar. A shot of tequila.  Some wilted celery. Some diced, slightly sprouting, small onions. Some other old vegies in the fridge, carrots, parsnips, like that. Added a pint of the last chili sauce I made, from the freezer. Boiled some more.

Primed the thermos with boiling water for ten minutes. Empty. Put pot of simmering goodness in thermos. Wish it good night.

Tomorrow, puree and strain.
