What is everyone’s favorite cheese and why? I could so become a cheese snob.

I love Feta’s bite…but I am not crazy about the texture. It would be better in recipes.
Mozarella (sp.) is a waste of calories because it has no flavor, but the wee one loves the string cheese.

A good aged white Cheddar…VERY sharp…is the best for melted ion sandwiches.
Swiss has a nice nutty flavor but tends to be a little dry.
